Region: "The grapes come from Katarzyna Estate’s own vineyards at the hilly border zone terrains between Bulgaria and Greece (the No Man’s Land) in the outskirts of the east slopes of Rhodope mountain with average altitude of
187-210 m.

Climate and soils: Temperate continental with over 3000 hours of sunshine and more than 110 sunny days throughout the year. Hot dry summers with warm nights, mild winters and no spring frosts and freezings.Soils are sandy, clay and limestone

Harvesting: Careful selective hand picking in crates at technological ripeness of grapes 25,6 % BRIX followed by immediate processing at a temperature of 6-8° C.

Vinification: The grapes are double sorted by hand in the vineyards and on sorting tables before reception in the winery, then de-stemmed, crushed and by gravity transported to the tanks. Cold maceration at 8-10° C for 7-9 days is followed by alcohol fermentation in stainless steel tanks at controlled temperature of 24-28° C, finishing with post maceration of the wine together with the solid particles for 7-9 days at 22°C. Finally the malolactic fermentation takes place in new French barriques, where the wine continues its barrel aging.

Tasting notes: "Deep, dark ruby color with cherry tinge. The wine possesses an intricate bouquet of earthy scents, black forest fruits, pepper and dominating noble tinge of tobacco, which contribute to its explosive nose. The wine is rich, powerful, and full body with velvet taste of black chocolate and caramel. A very pleasant final with harmonious and sift tannins. A long lasting aftertaste. With its well integrated oak and rich final, this wine is very suitable for bottle aging.

Region This grape is property of Katarzyna Estate Vineyard situated in "Nichia Zemya" (literal translation : No Man's land,close to the border with GREECE , in the locality og "Byalata Prast" (literal translation : White Soil) in the feet of Eastern Rodopa Mountain , at 187 and 219 m. of altitude.

Climate & Soils Temperate continental. Hot ,dry summers with warm nights.Mild and warm winters. No spring frosts. Soils are flinty and flinty-loamy soils,clayey-limy soils .

Harvesting Carefull ,selective manual gathering in crates and immediate further psocessing at 6°C - 8°C.Technological ripeness of the grape : 25%Brix(sugar content)

Tasting notes Sparkling, deep purple color. Rich aromas of tobacco, hints of ripe red fruit and well integrated oak. Powerful body with velvety taste and a long memorable finish with soft tanins.The wine has the potential for bottle aging.

About the brand: "Halla in the past socialists times was the secret name of the military check point at the Southern-East border of Bulgaria and Greece.
Now it is part of the beautiful Katarzyna Estate vineyards. An area in the No Man's Land, where pure Nature has been left undisturbed to follow its own way for more then 45 years. An area where we have recently planted our vineyards and could now enjoy a wine as pure and natural, as it could be."

Tasting notes Dark ruby saturated color with cherry tinge. Intense aromas of ripe berries combined with well integrated oak. Tight body, with velvety taste of black chocolate. Nice and long aftertaste.

Climate & Soils: Temperate, with a duration of sunshine over 3 000 hours during the year and over 110 clear days. Hot dry summers with warm nights. Soft and warm winter. No spring frosts. Soils are sandy and sandy-clay, clay - limestone.
About the brand: Les Cailloux or 'pebbles' Terroir is one of the most important components for the creation of a wine. The stony soils in Katarzyna Estate's terroir are ideal for detecting factor uniqueness of our vineyards, giving the wines in the cellar unique taste and elegant minerality.
Tasting notes : Yellowish color . Complex aromas of honey, citrus, grapefruits, in particular, very fresh tones of apricot and peach. Medium bodied, very fresh taste, with intense fruit, predominantly apricot and peach, with earthy nuances and tones. Warm finish and long aftertaste. Very nice and easy drinking wine.

The wine, which is a blend of the indigenous Bulgarian grape variety Mavrud and the French variety Cabernet Sauvignon, is rich and juicy, with a great balance between fruit, oak, tannins and acidity. Black chocolate and carame in the taste. The final is pleasant with harmonious and soft tannins. A long-lasting aftertaste.

Served: at 15-17 Cº

To be consumed: with meals made of minced meat, feathery game, stewed red meat, ripen soft cheese."

Vinification : The grape passes through sorting lines, where it is manually sorted ;then it is crumbled, crushed and gravitionally transported to stainless steel tanks, where cold maceration takes place at 8°C - 10 °C during 7-9 days ,alcohol fermentation at 24°C -28°C ,post maceration at 22°C-28°C during 7-9 days . Stained wine passes through maloactic fermentation in new french oak barrels of 225l. ,where its maturation and ageing continues .

Tasting Notes : Colour is sparkly ,deep, purple with pomegranate gleams. Flavour is reach,intricate bouquet of blue plum ,black forest berries ,pepper and dominating noble tobacco nuances . Taste is mighy,rich,full body possessing the velvet flavour of black chocolate,mocca and caramel.Very pleasent finish with soft and harmonious tannins and long taste and flavour memory . Bottle ageing possible

Vinification The grapes are double sorted by hand in the vineyards and on sorting tables before reception in the winery, then destemmed and crushed. The fermentation takes place in stainless steel tanks of 10m3 & 15m3. Cold maceration at 7-9° C for 5-7 days is followed by alcohol fermentation at controlled temperature of 26-28° C, finishing with post maceration of the wine together with the solid particles for up to 10 days at 22-24°C. Finally the malo-lactic fermentation takes place in new French barriques and 400 l new barrels. The wine continues its oak aging for further 18 months in new French barriques from Baron, Boutes, Taransaud & Vicard
Tasing notes "Intense dark ruby color with garnet tinges; ripe red berries, cassis, jam, smoke, chocolate, mocha and honeyed rich, harmonious nose; generous, full bodied, soft and elegant taste reminiscent of the same ripe red berries, cassis, jam and spices, enriched by the well integrated oak; long lasting impressively elegant mineral aftertaste. Great aging potential.
